Instructions

    1. Cook fusilli in salted boiling water. Reserve pasta water.

    2. Grate or thinly slice courgettes.

    3. Heat olive oil in a large pan. Add courgettes and cook 5-6 minutes until soft and golden.

    4. Add sliced garlic and chilli flakes, cook 1 minute.

    5. Add halved cherry tomatoes, cook 2 minutes.

    6. Drain pasta and toss into the pan.

    7. Add lemon zest, juice, and a splash of pasta water.

    8. Season and serve immediately.
